Our bivalve mollusk purification process takes place in facilities equipped with advanced technology. We use seawater treated with ultraviolet radiation to remove harmful bacteria and germs. In our facilities, mollusks are submerged in sanitized seawater tanks treated with ultraviolet radiation. This purification process, which lasts approximately 24 hours (depending on the species), allows the mollusks to eliminate bacteria from their systems by filtering clean water until they are completely purified and safe for consumption.

Once purified, our team of specialists meticulously hand-selects each mollusk, ensuring they meet KOSTERA’s quality standards. Only mollusks that pass this rigorous inspection move to the next stage.

Selected mollusks are prepared for transport on sanitized seawater ice, preserving their freshness and ensuring they arrive in optimal condition for the client.

To maintain the quality and freshness of our products, we offer a rapid freezing service that achieves temperatures of -18°C in under four hours. We use methods like contact freezing, cryogenic freezing, and air freezing to ensure each mollusk retains its integrity and original flavor. Additionally, we apply a protective glaze to extend the product’s durability.
