Quality and Environmental Commitment
KOSTERA is a Peruvian company focused on purifying live bivalve mollusks from the Peruvian sea. Our mission is to meet the growing demand for safe, high-quality seafood in a context where marine ecosystem contamination poses health risks. Through responsible practices, we bring fresh, sustainable products directly to your table.
Mollusk Purification: Technology and Food Safety
Our bivalve mollusk purification process takes place in facilities equipped with advanced technology. We use seawater treated with ultraviolet radiation to remove harmful bacteria and germs. This filtration system ensures each mollusk undergoes thorough cleaning, expelling any potential contaminants from its body. Thanks to our team of specialists and rigorous sanitary controls, we deliver products that meet the highest food safety standards.
The Natural Habitat of Bivalve Mollusks
In their natural environment, bivalve mollusks act as water filters, which means they can absorb contaminants if the sea is exposed to untreated discharges, such as fecal matter and other waste. This poses a potential risk for human consumption. At KOSTERA, we ensure that each mollusk undergoes a careful purification process that eliminates these pathogens, guaranteeing safety and freshness in every delivery.
OUR WORKFLOW: Quality Assurance
1. Artisanal Harvesting
Our mollusks come from local divers who practice artisanal and responsible fishing methods. This technique ensures sustainable and careful extraction while preserving marine biodiversity.
2. Controlled Purification
In our facilities, mollusks are submerged in sanitized seawater tanks treated with ultraviolet radiation. This purification process, which lasts approximately 24 hours (depending on the species), allows the mollusks to eliminate bacteria from their systems by filtering clean water until they are completely purified and safe for consumption.
3. Selection and Quality Control
Once purified, our team of specialists meticulously hand-selects each mollusk, ensuring they meet KOSTERA’s quality standards. Only mollusks that pass this rigorous inspection move to the next stage.
4. Delivery and Preservation
Selected mollusks are prepared for transport on sanitized seawater ice, preserving their freshness and ensuring they arrive in optimal condition for the client.
5. Rapid Freezing
To maintain the quality and freshness of our products, we offer a rapid freezing service that achieves temperatures of -18°C in under four hours. We use methods like contact freezing, cryogenic freezing, and air freezing to ensure each mollusk retains its integrity and original flavor. Additionally, we apply a protective glaze to extend the product’s durability.
Clients and Market
KOSTERA’s main clients include wholesalers, hotels, restaurants, and end consumers seeking fresh, safe seafood. We take pride in working with those who value the quality and safety of our bivalve mollusks, knowing that each product has been carefully purified and subjected to strict quality controls. At KOSTERA, we strive to provide our customers with the confidence to enjoy Peruvian sea mollusks with complete peace of mind.
